As 2012 is quickly fading away- I wish to thank all of our friends, old and new, a safe and Happy New Year. Rest assured I will drink a toast to all of you- and because I really care about you, I will be toasting
you with a 2009 Limited Edition Petit Verdot and the last bottle I have of 2009 Limited Edition Pacific Quartet! If you have made either of those wines you know I’m going to have a great New Years Eve 😀

The big dinner is only a few days away and if you’re wondering what wines to drink with the big bird here’s a few safe
bets-
– For red wine lovers choose a lighter wine like Pinot Noir– its more elegant nature will not over power either turkey or ham.
– For white wine lovers most good white wines will do. Chardonnay and Pinot Grigio will work well and dry is better choice than sweet.
– A nice Blush will also work very well with both turkey and ham but again don’t go too sweet. A French or Spanish Rosé will both work wonderfully.
But when it’s all said and done any wine you have on hand is better than no wine at all!

The Easiest Way to Clean Your Bottles!
As we get closer to Christmas many winemakers are in a hurry to get their wine bottled. As a result, many of my customers are asking me what the best way is to I sanitize their bottles.
I recommend two methods:
1- Bring them into my store on Pembina Highway and run the through our Automatic Bottle Washer. The Bottle Washer is a modified industrial dishwasher that sanitizes 30 bottles inside and out in under 8 minutes. Very fast!
2- If coming in to the store is not convenient then I recommend using an Avvinatore Bottle Sulphiter and Aseptox (no rinse sanitizer) to sanitize the inside of the bottles. The Avvinatore squirts sanitizer inside your clean bottles. Then hang the sterilized bottles on a Bottle Tree to drip dry. The Bottle Tree keeps your bottling area neat and tidy while you clean and bottle.
Both methods will save you a lot of time when sanitizing bottles and help relieve a little ‘Holiday Stress’!

Apparently people don’t always finish the bottle?!
