Try Pinot Noir

September 14, 2012

Do you know anyone who says they don’t like red wines? Do they find them harsh and too dry… or they ‘Just don’t like red wines’?

Have them try a Pinot Noir. Why? Because Pinot Noir is light bodied, has silky tannins (smooth) and has a pleasant fruity finish with notes of cherries and berries. This means Pinot Noir is not only a pleasant sipping wine, it is also a versatile meal wine that will complement chicken, pork, red meat and fish.

Pinot Noir is the grape that makes French Burgundies consistently some of the most expensive wines in the world! It is now grown all over the world so it’s easy to find a Pinot Noir from most of your favourite growing regions.

Heck- even if you love red wines and never have tried Pinot Noir… Why not?!

Wine Sense stocks 11 different Pinot Noirs for you to choose from:  http://www.mywinesense.com/wine/red/pinot-noir/

Patience

September 7, 2012

pa·tience/ˈpāSHəns/

Noun: The Capacity to accept or tolerate delay, trouble, or suffering without getting angry or upset.

What has patience got to do with winemaking? EVERYTHING.

Wine making from kits is not an exact science. It is very, very close but not exact. There are a few factors that will effect your winemaking process but for the most part if you have a little patience it will all work out : )

-If your room temperature is too cool your wine may not ferment within the guidelines in the instructions- but if you’re patient for a couple of days- it will get there.

-If your room is too cool and the wine does not clear in the instruction time frame, give it some more time- it will clear.

-If your wine is not degassed properly the wine may not clear within the instructions timeline. But if you stir or ‘whip’ a little more it will clear.

Again most of the issues are caused by deviating from the instructions- and for the most part temperature variations (seemingly a part of life in Manitoba) are the cause. But if you are patient your wine will get to where it’s supposed to be if given a couple of extra days.

And Most importantly- patience in the bottle! All good wines will improve with age. That’s why most commercial wines are not even released to the public without a year or two of ageing. See if you can find a 2012 bottle at the wine store!

All that being said- Myself and all of your Wine Sense staff members are always happy to answer any concerns you may have.

Cheers,

Bruce, Manager (Wine Sense- Pembina Hwy)

Cellar Craft Wine Kits

August 31, 2012

As you know, we started carrying the Cellar Craft wine kit line in January. Vineco, one of our two wine kit manufactures took a look at Cellar Craft and said “We liked it so much we bought the company.”

Cellar Craft Sterling wines are light enough for sipping on their own and are hearty enough to compliment your favourite meals. At this point we are stocking the reds- they contain a unique, varietal-specific Crushed Grape Pack for true fermented-on-the-skins flavour and aromas. Usually bottled in as little as 5 – 6 weeks. The reds will require a few months of cellaring to show their charm. These are 12 litre wine kits that include grape skins. The skins will improve the body, depth of colour, and the flavour or taste of each glass poured. Early drinking at a value price. Life doesn’t get any better.

The 18 litre Cellar Craft Showcase offer even more character as well as vineyard specific varietals. The red wine offerings also have the varietal-specific Crushed Grape Packs which give you wonderful wines with character that shines while young- but reward those who can be patient with terrific depth and finish. Cellar Craft Showcase is ready in about 6 weeks.

We’ve had great feed-back on these wines and are pleased to add them to our collection of excellent wines!

Cheers

Bruce, Manager (Wine Sense- Pembina Hwy)

P.S. The Cellar Craft Flavoured Ports have just arrived- don’t miss out if you did not order one!
